The Harvest
The Harvest : Temperatures
much lower reaching maximums of 35° - 37°
C with a number of cloudy days and southeast wind
– but no rain. In early September the clouds
burst and the grapes developed wonderfully juicy aromas
of raspberry and strawberry in tight and clean bunches.
Nights in September were cool on average 10° and
during the day perfect clear blue skies with temperatures
of 24/25% – these climatic conditions were ideal
and allowed the fruit to mature with striking contrasts
between sugars and acidity – the perfect combination
for sensational wines so the 2004 vintage will be
even better than last year!

Once the grapes are picked
they are taken immediately to the cave and the long process
of wine making begins. The photos below show the cave at Baronnie
de Bourgade, with the courtyard, the cave entrance and interior,
and finally, bottom right, one of the cuves converted into an
unusual tasting room.
