  The Wine-Makers

Baronnie de Bourgade has been in Gilles family since the French revolution. The property had belonged to the Church and was therefore considered a “Bien Nationale” and sold off by the revolutionaries. It was acquired by the Baron de Latude.

Since an early age Gilles participated in the tending of the vines and in the wine-making. Since 1994 he has run the vineyards with the help of a specialised team of workers.

For wine-making he is assisted by Jean Natolie a well known oenologist in the Languedoc. When Gilles acquired the property wine was no longer made at Bourgade, the grapes were sold off at the harvest to local wineries. In 2003 Gilles and his wife Ruth decided to launch their own bottles (one rosé and two reds) beginning with a small production of 7,000 bottles.

In 2004 “Les 3 Poules” Cabernet Franc was awarded a star in the French wine bible “Le Guide Hachette”, by Christmas they had sold out of their first vintage. In 2005 25,000 bottles were produced and the range expanded to include a white Vermentino, a red Syrah-Grenache blend (La Coquine) and the oak barrelled red Cabernet Sauvignon/Merlot – “La Mère Poule.”

In March 2005 the Cabernet Franc was awarded a Trophy at the London wine fair for the best Cabernet Franc Vin de Pays. “La Coquine” won a similar award in Dublin the following September and Les 3 Poules Cabernet Franc another * in the 2005 Guide Hachette.

This year, 70,000 bottles have been produced including a new wine “Grenache Red”. Although Languedoc is going through the worst viticultural crisis in its history Gilles and Ruth remain hopeful that their wines will continue to be a success and enable the vineyard and wines to progress.

It is an extraordinary feat to have increased in three years ten times the volume and today half of the total production is bottled under their label “Les 3 Poules.”

The Grapes on the domain
The grape varietals have been chosen specially for their quality in this type of soil and there are:

"" 7 hectares of Grenache
"" 5 hectares of Merlot
"" 3 hectares of Syrah
"" 5 hectares of Cabernet Sauvignon
"" 2 hectares of Cabernet Franc

The average age of the vines is 25 years, ideal for producing well matured grapes. The micro-climate and soil give small but intense and fruity yields of 35 hL/ha. The harvest is hand picked and the grape’s freshness is fully maintained. The wine is vinified by traditional methods with long macerations and temperature control and some wines maturing in new French oak barrels.

The label “Les 3 Poules” was designed by Ruth. It was originally a Christmas card relating to the well known Christmas Carol “The Twelve Days of Christmas” and “Three French Hens” was the title of the card.

It was Gilles who decided to use the Christmas card as a label for their first 2003 vintage, neither of them realised at the time the impact the label would have and without doubt it has contributed to the success of the wines.
